Food enthusiast Pito Kiba pursued a Diploma in baking and cake art with the hopes of running his very own café and bakery. Today he has quite a following on Social Media and is blessed with a busy schedule preparing orders for weddings and birthdays. Prepare your tastebuds for a yummy treat as you try out Pito kiba's recipe for one of his best selling cakes- Double chocolate Orangecake! Double chocolate Orangecake recipe Ingredients: Flour- 200 grams Butter 150 grams Sugar 200 grams Baking powder -20 grams Eggs- 4 (room temperature) Cocoa powder – 50 grams Semi sweet or dark chocolate -100 grams (melted) Milk-220 ml Orange zest 3 table spoons Vanilla essence =1 table spoon or 15ml For the icing 250 grams dark chocolate 200 ml cream (amul fresh cream) 20 grams butter 5ml vanilla essence 5ml rum or any dark liquor Method *Beat the butter and sugar till light and fluffy, add the vanilla essence, orange zest and add eggs and beat well. *Sift the flour and baking powder with the cocoa powder twice and add to the mixture, add the milk and mix well and lastly fold in the melted chocolate and mix well. *Line an 8 inch baking tin with butter paper and pour in the mix. Preheat the oven to 180 degree C and bake for 60 minutes For the icing bring the cream,vanilla,butter and rum to boil and pour over the chopped chocolates, rest for a few minutes, and beat till smooth. Leave to cool. Slice the cake into three parts and ice it with the cooled chocolate cream/ganache and top it with fresh berries or chocolate-coated nuts.
