Recipe of Crispy triangle pastry –  a favorite at Apron Strings Café

Ingredients
80 gms minced chicken
2 cloves garlic
1 stalk coriander root
½ teaspoon white pepper powder
1 teaspoon yellow curry powder
1 teaspoon coriander and cumin powder
½ piece onions (chopped)
30 gms boiled potato (cut in small cube)
1 tablespoon vegetable oil
1 tablespoon wheat flour (for sealing spring roll pastry)
1 teaspoon light soya sauce
½ tablespoon sugar

Method
• In a mortar, add garlic, coriander root and white pepper. Pound together into a paste
• Add the vegetable oil in a wok and on medium heat, add the pounded paste, minced chicken, chopped onion, curry powder, grounded coriander seeds and cumin seeds. Keep stirring until chicken is cooked
• Add the seasoning to taste and then add the cubed potatoes. Mix well and set aside
• Cut the spring roll rice paper into long strips
• Wrap the cooked ingredients with spring roll rice paper into a pyramid shape
• Deep fry until golden brown,
• Serve with chili sauce
