Good Morning Nagaland: Special Odisha recipes by Ranajay Chakraborty
Ranajay Chakraborty, a graduate in Hotel and catering management from Asan Memorial College of Arts and Science, University of Madras, Chennai shares the dish of the day!
The recipes contributed by Ranajay are one of the most popular delicacies in Odisha. Ranajay who is the only son of the family is presently working in Chennai whilst his family is settled at Odihsa.
He says, ‘The following recipes were taught to me by my mom when I was young and I recreated it by putting my own twist.’
Dahi Maccha
(fish in curd gravy)
Ingredients:
Half kilo gram Rohi Machha (Carp Fish) ,
2tbspoon Turmeric Powder ,
1 Small Lemon,
1 bunch curry leaves,5 whole green chillies
2tbspoon mustard and cuminseed paste
7garlic podes, half cup mustard oil
2 cup thick curd,salt to taste
coriander leaves for garnishing
Method:
Clean the fish pieces and marinate with salt turmeric powder and lemon juice for 1 hour. Then heat oil in a pan , shallow fry the fish pieces only for 2 to 3 minutes. Now in a pan arrange these half fried fish pieces, beaten curd mixed with 1 and half cup of water,mustard paste,curry leaves,whole garlic,salt,turmeric powder,mustard oil,green chillies. Cook it for 20 minutes in medium flame .
When the gravy becomes a bit thick put off the fire and garnish with chopped coriander leaves. Serve hot with steamed rice.
Dalma
Ingredients:
2 Chopped Potatoes, 1 Chopped Raw Papaya
250 grams Split chick peas, 1 tsp Turmeric Powder
Little water, Little bit smashed Ginger
2 Whole Red Chilies, 3 Tbsp Mustard Oil
1 Bay leaf, 1 Tbsp Paanch Poran (mix of five spices)
1 Tbsp Cumin Seeds, 1 onion, Little bit chopped Ginger
2 Split whole Green Chilies, 1 tsp Turmeric Powder
1 tsp Red chilli powder, 1 tsp Coriander Powder
Salt for taste, 1 tsp Sugar, Lime
Recipe:
Pressure cook till one whistle chopped raw papaya, potatoes, split chick peas, turmeric powder, salt for taste, little water, smashed ginger and whole red chillies.
In a pan, add mustard oil, bay leaf, paanch poran, cumin seeds, julian onion, chopped ginger and split whole green chillies. Mix them well together.
Add turmeric powder, red chilli powder, coriander powder, salt for taste, sugar and lime. Stir them well.
Transfer the daal to the pan. Simmer it for 35-40 minutes. Serve hot .
