Nepali ‘Sel Roti’ recipe by Maloti Gurung

Maloti Gurung mother of three settled in Dimapur permanently is married to a man from the same community who works in a government office in Dimapur.
Maloti who is born and brought up in Dimapur says that her ancestors of two generations were also settled in the district itself. Maloti Gurung today shares the recipe of traditional Nepalis bread- Sel Roti which is served at their house during occasions or various celebrations.

Ingredients:
– Grinded Rice
– Sugar
– Maida
– Baking Powder
– Oil (preferably refine oil)
– Egg
– Banana
– Sugi
– Ghee

Procedure:
1. Mix the grinded rice, maida and baking powder together.
2. Then grind eggs, bananas and sugar together in a mixture till its finely mixed.
3. Heat water in a pot and pour it onto the mixed ingredients of both step one and step two.
4. Stir and mix it thoroughly till its finely mixed and turns watery.
Heat oil in a pan and pour the mixture in the shape of a circle either with hands or using fine cotton clothes.

Peas (matar) Chatni:
Ingredients:
– Tried peas
– Sesame Seed (Til)
– Ginger
– Garlic
– Onion
– Tomato
– Green chilli
– Salt to taste

Procedures:
– Soak the tried peas overnight
– Fry the sesame seed for few minutes in a hot pan and grind it
– Then heat oil in a pan and fry ginger, garlic, onion, tomato, green chilli and the soaked peas together till its properly cooked
– Put the fried sabji in a bowl after its properly cooked then add the grinded till for better taste and delicious aroma.
