Unique Nagas and the inimitable Naga dishes
Kidney beans also known as Rajma in Hindi and Kholar in Nagamese is considered as one of the most common dish of Yimchunger Nagas. Kholar can be cooked both in vegetarian and non-vegetarian style. In today’s ‘Good Morning Nagaland’, Yimsola shares few Yimchunger style of cooking Kholar.
1. Fried Kholar
Ingredients:
Onion
Green Chilli
Turmeric
Ginger garlic paste
Tomato
Oil
Salt to taste
Coriander
Procedures:
Boil the soaked kholar with just water and salt in a pot or pressure cooker till finely cooked.
Heat oil and fry the sliced onion and green chilli with turmeric powder and ginger garlic paste
Then put the drained dry Kholar into the frying pan and cook for few minutes.
Then put crushed tomatoes and chilli powder into the curry and pour water as per the requirement.
Finally taste the salt and put fresh coriander for better taste.

Then add the sliced onion, green Chilli, tomato and fresh Coriander together.
The Kholar is ready to serve
3. Boiled Kholar with dry pork
Ingredients:
Dry Pork
Green Chilli
Tomato
Coriander
Salt to taste
Black Pepper
Procedures:
Boil the soaked kholar with just water and salt in a pot or pressure cooker till finely cooked.
Open the lid and put dry pork, tomato, chilli and cook for few minutes
Then pour black pepper and coriander for better taste.
And its ready to serve
